I think it would be cool if there were more ways for guests to interact with animals (besides running away screaming.) For example, many zoos and aquariums have sleepover nights for kids to spend the night next to their favorite exhibits. Other places have zookeeper-for-a-day programs for kids. For marine exhibits, there could be swim with fish/dolphins/sharks/whatever for guests. (I just did a dive-with-the-sharks event... totally awesome!)
